Three distinct sauces here, making for one of the more varied and unique Hot Sauce of the Month boxes I’ve gotten!
Post Mortem will be one of the only extract sauces in my collection, as I also avoid them as an unofficial rule. In this one, I can still taste the bitter extract in it, but it’s better than most in that regard (and not unbearably painful.) The flavor is decent overall. I’ll probably use it mostly for big batches of food that could use some smokiness and a lot of straight heat!
HDSC’s Piri Piri is indeed painful – it’s an ass-kicker, which I was expecting as a huge fan of their Not Mama’s Chamoy (an amazing raspberry and 7-Pot sauce.) The flavor profile is unique in a way I can’t quite put my finger on; piquant, herbal, smoky, and tangy. It’s thicker, more flavorful, and considerably hotter than Nando’s (which is the only other piri piri sauce I’ve had.
Then my favorite of the bunch, this delightful Sunny Citrus Habanero. It’s the mildest of the bunch, but still not one for beginners with 7-Pot mash hiding beneath its bright citrusy surface. It’s extremely flavorful, and very well-balanced, featuring unique notes like grapefruit and goji berry. The color and texture are gorgeous; a vibrant melange of orange and red chunks. This one won’t last in my refrigerator!
