Green sauces can be hit or miss for me, for me to really enjoy them they have to have a lot of vibrancy and a big fresh flavor. If they taste muddled or don’t have that big grassy herby vegetal flavor I just can’t get into them.
This one absolutely hits all of my sweet spots – it’s bright, herbal, intensely ‘green’ tasting, and is very aromatic.
It’s an interesting sauce because while it has a lot of very strongly flavored ingredients – ginger, lemongrass, cilantro, cumin, and reapers amongst them, none of them stand out and steal the show. It’s very much an ensemble-cast type of a sauce, everything blends perfectly to create a whole greater than the sum of its parts.
Don’t be afraid by the mention of Carolina Reapers on the front of the bottle. It doesn’t have any of that astringent flavor that reapers can sometimes have, and the overall heat level is only a solid medium on the spicy food enthusiast scale. There’s some warmth, but it’s not going to blow your mouth up with heat.
For anyone looking for a non-Mexican style green sauce, this one gets a big recommendation from me.
