Any traditional recipes for old really starchy chewy sweet corn?


I grew a ruby red variety of sweet corn this year but unfortunately the drought made them pretty starchy. I've got a bunch of ears that I could use for seeds next year but I want to see if there's some way I can cook with these. I figure if there was any culture that knew how to use corn in different variety of ways, Mexico is definitely one of them.
