
I know this sub has a lot subscribers from outside of Mexico so just wanted to add some context as to why chiles en nogada are considered special.
Story has it that the dish was first served in the city of Puebla in 1821 to independence leader Agustin de Iturbide to celebrate the culmination of the war for independence.
The dish is meant to show the colors of the Mexican flag. Beyond that it also shows the blending of the European with Indigenous cultures as ingredients and techniques from both cultures are used for this dish.
