
I am making hot sauce for my guests at my wedding – so totaling about 250 oz needed for the extra bottles etc.
I have been growing a lot of peppers all season, and am planning to use as many of them as possible. The base will be mostly habaneros, but have jalapeños to make a milder batch, and ghosts for a hotter batch.
Can anyone point me in the direction of a large batch recipe or advise on doing this at a larger scale than I have before?
