What is in the “chipotle sauce” in this dish?

    This dish seems to exist in almost every mexican restaurant I’ve been in. Sometimes called “Chicken Chipotle”, but it’s basically some combo of rice and beans with a Chicken+Bacon+Poblano Peppers in a ‘chipotle sauce’.

    I would love to try to recreate the dish but I can’t seem to get the sauce right and when I look up a copycat recipe I can only find links to Chipotle’s (the burrito place) chicken instead of this dish. Please help.

    Search for chipotle enchilada sauce. That’s essentially what this is.

    I usually buy a can of chipolte peppers, and use this sauce or blend the peppers with the sauce.

    is most of the sauce cooked out or is is more or a marinade? i don’t eat at these kinds of restaurants and the pollo enchipotlado that I am familiar with is very different than the picture you provided

    Ask the restaurant. There’s not much information to go on by, like is it cream base? Maybe mayo based? Or tomato based? It’s too loose to make an informed guess
