These must-try chili pot pies are a favorite! They are easy to make and are the perfect cozy dinner recipe for fall and winter. These mini chili pot pies are also ideal to refrigerate and pull out for a quick and hearty lunch during the week.

RECIPE:
Chili Pot Pies
Ingredients:
1 lb ground beef
1 can chili beans
1 can diced tomatoes, undrained
1/2 tsp garlic salt
1/2 tsp chili seasoning
1 box Jiffy corn muffin mix
1 egg
1/3 cup milk
1 cup Colby cheese, shredded and divided

Directions:
1.) Preheat the oven to 375 degrees.
2.) In a large skillet, brown the ground beef and drain. Add the chili beans, diced tomatoes, and seasoning. Bring to a low boil and reduce heat to simmer. Simmer uncovered for 5-10 minutes. Divide the chili mixture among four (12oz) ramekins. Set aside.
3.) In a mixing bowl, combine the Jiffy corn muffin mix, 1 egg, and 1/3 cup milk. Stir until well combined.
4.) Sprinkle half the cheese over each ramekin chili.
5.) Spoon the corn muffin mixture into each ramekin. Spread evenly to the edge.
6.) Move each ramekin onto a baking sheet and bake uncovered for 20-25 minutes or until golden brown.
**Serve chili pot pies with a sprinkle of cheese and sour cream if desired. Delicious!!

  4. I make a cornbread pudding for the holidays, and that same batter that I use for that based on Jiffy cornbread mix would be perfect on top of this as well. It has creamed corn and grated cheese in it. This basic recipe gives us a starting point to do our own little tweaks.

  5. I would just buy regular cornmeal corn bread mix. Jiffy cornbread has sugar in it you really don't want sweet cornbread with a savory dish.
