My Favorite Hot Sauce


I’ve tried a lot of sauces, and I love most of them, but I think if I had to pick a favorite it would be this.

Simple high quality ingredients. There’s just enough smoke to make it taste full and rich without making it taste too smoky, the fermented jalapeños are mixed with fresh ones so you get the fermented complexity and funk plus the fresh pepper sweetness and vibrancy, and the former rum barrel gives it just a tiny hint of rum sweetness and that nice wood note that you get from bourbon or Scotch.

I’ve seen a few people post things along the line of “why would I ever spend more than the $3-$5 I can buy Cholula for at the grocery store?” For those people I think you need to try this sauce. Yes it’s pricey at $14/bottle but it’s made with just four very high quality ingredients plus a lot of time and care, and that comes through in the flavor. Try something small batch and artisanal and you’ll see the difference.

Robust, rich, a little natural sweetness from the peppers, a little smoke, a little funk, a little tang, this goes with anything and it’s medium-low in heat so it’s easy to slather on. In fact that’s my only problem with it, I went through two-thirds of the bottle in a single day.

    Thank you! This is my favorite sauce too. We’re just about sold out of this batch and the next batch is fermenting now. It will be ready at the end of November.

    The reason that we call it smoked jalapeño instead of chipotle is that we started making this sauce in 2016 for a Vermont market that (mostly) didn’t know what a chipotle was. If we were creating this sauce for the first time now, we would call it chipotle. The spicy world has changed a lot in 8 years! Especially in Vermont.

    And like others have pointed out, we do make our chipotles differently than the norm. So there is that too.
