Canned Strawberry Ghost/Reaper Hot Sauce


Well, it’s been decided. Everyone’s getting hot sauce this Christmas. Second time making hot sauce, first time canning it. This guy is a scorcher!

12 x 125mL, and 12 x 250mL… plus two racks of dried chillis 🌶️ and more still to come

Ingredients;
Strawberries, Tomato, Carrot, Onion, Garlic, Olive oil, Apple Cider Vinegar, Lemon Juice, Ghost Pepper, Carolina Reaper, Salt, Sugar, Citric Acid, Water

Notes:
Ended up having to double the batch ingredients because the Apple Cider Vinegar flavour took over (tasted pickled pepper rings, no strawberry – at first). Once that was fixed, to get the right pH for shelf stability I used a little citric acid and lemon juice.
