A local San Diego favorite. Once you start eating these, you can’t stop. It’s delicious, crispy, garlicky, peppery, and salty. Local San Diegans name these “Crack Chicken”.
Here is my recipe that serves 2-8 people (depending on how many pieces they want to eat):
Ingredients:
2 lbs of chicken wings/drumettes
1 whole head of garlic minced
1/2 bunch of chopped scallions
1 1/2 tsp. of red chili flakes (more or less depending on your spice level)
3 tbspn of Shaoxing wine
1 1/2 cup of cornstarch + extra for dusting
1 cup of cold water
and as much MSG as you would like to flavor your chicken
Peanut oil
Directions:
1. Add water in a bowl with wine, and corn starch. Mix until a batter forms.
2. Dust your chicken with cornstarch.
3. Add chicken to batter. Let chicken soak in batter.
4. Heat up peanut oil enough to deep fry the chicken.
5. You will need to fry your chicken in batches until golden brown. Drain chicken on paper towels.
6. In a separate pan, heat up oil in a pan.
7. Saute garlic until fragrant. add chili flakes, and green onions.
8. Once mixture is heated through, toss chicken in the garlic and onion mixture.
9. Once chicken is coated with mixture, season chicken with MSG.

The real crack chicken! I moved from San Diego about 2 years ago after getting out of the Navy. This chicken is just known universally is crack chicken among shops, at least on helos.

I followed this recipe exactly but they turned out horrible. Idk what I did wrong. The only difference is I used canola oil not peanut and I did the exact same temp 365 but they came out overcooked.
