What’s for Dinner | Buffalo Chili | Tajin Shrimp | Roasted Chicken



Tonight, we’re back to an old-school “What’s for Dinner,” the kind where we sit down, share a meal, and talk about life. First up is a rich, hearty buffalo chili made with real bison from a neighbor down the road. Nothing quite warms the bones like a good bowl of chili on a cold night. Then it’s on to meal two—Tajin shrimp cooked up in a cast iron pan, served taco-salad style with a bit of peach salsa for good measure. Simple, flavorful, and just the right amount of spice. Finally, we wrap it all up with a classic roasted chicken, slow-cooked with butter, thyme, and onions until the house smells like Sunday dinner at Grandma’s.
Somewhere between stirring pots and setting the table, we talk about what’s ahead for 2025. Plans for the homestead, health updates, and the small things that keep life moving forward. The deep cold has settled in, the chickens are hunkered down, and there’s a long stretch of winter yet to go, but spring is out there somewhere, just waiting.   6. If I have left over broth, I use the small silicone cube trays with lids and freeze the rest. Its so nice to have . I also have a 1/2 cup size and this is really nice to just grab for recopies.

  7. Rachel and Todd, it's great to see you guys looking so good. Rachel I've been thinking and praying for you and whatever is going on with your health. A suggestion for the 2-year-old grandson, if he loves dogs the classic movie Balto is wonderful. My daughter loved this movie all through her young childhood and as she is 33 years old now she still remembers and thinks about the balto movie.

  8. Hey Rachel and Todd, I do like the what's for dinner segments. I have a suggestion though, since it's hard to sit here and you guys not eat your delicious warm dinner, a suggestion would be to sit down to dinner let us know what you're having, eat your dinner maybe off camera and then after your dinner is finished and plates are emptied you could sit and talk a little bit about how good the dinner was, family updates and even take a few minutes to share those future plans. This way it wouldn't be interrupting your eating your delicious dinner. Just a suggestion, love you guys so much. Be well.

  9. MN here. Was -20 a week ago (-40 with wind). Today it was 47 today. That's close to a 70 degrees swing in a week. Not normal

  10. Tajin…pronounced tahin…I’ve never used it on shrimp, good idea. Also good on raw cucumber or rim your margaritas. Back when I roasted chicken I’d add rosemary and lemon
