Ingredients (Gravy)
• Butter – 3 tbsp
• Oil – 1 tbsp
• Onion – 1 large, finely chopped
• Ginger-Garlic Paste – 2 tsp
• Tomato Puree – 1 cup
• Cashew Nuts – 10–12 (soaked and blended into a paste)
• Red Chili Powder – 1 tsp (adjust to taste)
• Turmeric Powder – ½ tsp
• Coriander Powder – 1 tsp
• Garam Masala – 1 tsp
• Kashmiri Red Chili Powder – 1 tsp (for color, optional)
• Fresh Cream – ¼ cup
• Milk – ¼ cup (optional, for extra creaminess)
• Sugar – ½ tsp (optional, balances acidity)
• Salt – to taste
• Water – ½ cup (adjust consistency)
• Kasuri Methi (dried fenugreek leaves) – 1 tsp, crushed
• Fresh Coriander – for garnish

Instructions
1. Heat Butter & Oil: In a pan, heat butter and oil together. Add finely chopped onions and sauté until golden brown.
2. Add Ginger-Garlic Paste: Cook for 1–2 minutes until the raw smell disappears.
3. Add Tomato Puree & Spices: Mix in tomato puree, red chili powder, turmeric, coriander powder, and Kashmiri chili powder. Cook on medium heat until oil separates.
4. Add Cashew Paste: Blend soaked cashews into a smooth paste with a little water and add to the gravy. Cook 3–4 minutes for richness.
5. Add Water & Simmer: Add ½ cup water (adjust for desired consistency) and simmer for 5–6 minutes.
6. Finish with Cream & Milk: Lower the heat and stir in fresh cream and milk. Add sugar and salt to taste.
7. Add Kasuri Methi & Garam Masala: Crush kasuri methi between your palms and sprinkle in. Add garam masala. Mix well.
8. Garnish & Serve: Garnish with fresh coriander. Pour over cooked chicken or add chicken pieces to the gravy and simmer for 5–7 minutes. Serve hot with naan, roti, or rice.

✅ Pro Tip: For ultra-rich flavor, use unsalted butter and adjust cream/milk to get the consistency you like.
