Meal in a Bag: White Chicken Chili 🍲

Everything in this bag is shelf-stable, easy to find, and costs under $8 based on Walmart prices.

What’s inside:
2 cans Great Northern Beans – add protein and fiber
1 can of corn – a touch of sweetness and color
1 can Green Enchilada Sauce – adds seasoning, spice, and depth of flavor
1 can Salsa Verde or Green Chilis – gives that tangy, zesty chili kick
1 can Cream of Chicken – makes it thick, rich, and comforting
1 large can Chunk Chicken – the protein that brings it all together
1 Bouillon Cube – just a little boost of flavor magic

My husband made this today – he doubled most of it, but added 4 cans of beans & 3 chicken, used green chilies instead of the salsa verde, and some low sodium taco seasoning & lower sodium cream of soup. It was delicious with cheese & tortilla chips on top. We have lots of leftovers for several meals. I made the corn chowder with a few tiny modifications and it was excellent!!

    We’ll be trying all these recipes. I have chronic illnesses and these are so helpful to put together on low energy days.

  7. There's an old recipe called "cowboy stew" by Headless Mom (it's on ayearofslowcooking). It's canned goods + ground beef. It could easily be meat free or swapped for canned chicken. It's a frequent meal at our house and would make a good pantry meal.

  12. I am REALLY tempted to pick up these ingredients for myself today, for an easy meal over the weekend! Another variation idea (for your home or to send home with guests after a holiday meal): substitute chopped leftover Thanksgiving turkey instead of the canned chicken for a "White Turkey Chili"! 🙂

  13. The fact that Walmart made 680 billion dollars of profit last year and we are putting together meals in bags because most of our countryfolk can't afford food should give everyone on this thread pause.
