β’ Protein: 19 g
β’ Calories: 350 kcal
Ingredients (for 3 quesadillas):
β’ Boiled rajma β 100 g
β’ Boiled sweet corn β 50 g
β’ Onion β 1 medium, chopped
β’ Paneer β 60 g (for filling) + 70 g (for mayo)
β’ Hung curd β 50β60 g
β’ Soaked cashews β 6β7 pieces
β’ Salt β to taste
β’ Peri-peri masala β to taste
β’ Red chili flakes / chaat masala / oregano β optional seasonings
β’ Mozzarella β 20 g, crushed
β’ 3 medium rotis
Recipe:
1. In a bowl, combine boiled rajma, corn, chopped onion, and crumbled paneer (60 g). Add salt, peri-peri masala, and your choice of seasonings.
2. In a blender, add 70 g paneer, hung curd (50β60 g), soaked cashews, salt, and pepper. Grind to make a smooth, healthy mayo.
3. Mix the mayo with the rajma-paneer mixture.
4. Spread this mixture on a roti, top with crushed mozzarella, and grill until the cheese melts and the edges are crispy.
