Yup, this is my longest trip so far this year and it was certainly an interesting one. I knew the weather was “iffy” and it didn’t let me down as a huge thunderstorm rolled through.
In an effort to be prepared, I brought some pre-cooked chili because I knew using the solar panels was probably not going to happen. I was correct. But I got to enjoy some delicious (and spicy!) chili while I listened to the rain. In this video I share the recipe, some tips, and a great smoothie recipe as well.
