Everybody thinks they make the best chili in the world. I’m not here to tell you whose is best… or wait, maybe I am. Today we’re cooking and ranking chili recipes from three of the most well known Food Network chefs to see who actually makes the best bowl of chili.
We’re making Alton Brown’s pressure cooker chili, Ina Garten’s award-winning Devon chili, and Guy Fieri’s Dragon’s Breath chili, cooking each one straight from the recipe before tasting and ranking them head to head. At the end, we’ll even combine the best parts of all three into one unholy Food Network Franken-chili, because of course we will. Who takes the W? Science, elegance, or full-throttle chaos. Puttin' beans in chili, why that's what happens when ya let them dadgum Yankees—those high-falutin' Northern varmints—go and muck up a perfectly fine Southern recipe, I tell ya, ruin it faster than a fox in a henhouse! Lordy have mercy, down here in Dixie where the collards are green and the grits are hot, we know better than to meddle with tradition like that—it's plumb sacrilege, dumber than a post tryin' to outsmart a plow! Hoo-wee, bless their misguided hearts, but keep 'em away from the cookpot, I say, away from the fixin's altogether!
I can't watch the entire video right now but I will definitely watch when I can. I just finished Guy's part and I don't think i could even LIFT my dutch oven after all that stuff is in! Mine is super heavy to begin with YIKES but it looked pretty great. I wonder why he wouldn't use beef stock though? More beefiness imho? Can't wait to watch the rest! Love your channel so much, especially when you pit our favorite people against each other and test their recipes. How could Alton NOT win. Guess I'll have to wait and see lol

Anything I make with canned beans that calls for water just gets the bean juice instead. It’s just a chance for more flavor.

None of these recipes have dark chocolate though… I love a little dark chocolate or cocoa powder in my chili. (The coffee probably adds similar flavor notes.)
I won't lie. I have been making Alton's chili for years and it's my go-to. But that's because I am a chili purist. And like Chili's and meat. Fuck a bean. And I like my chili to be thick. Like the OG recipe.
But if the thing you're used to thinking of is chili is the thing you get from an American diner then I totally understand being weirded out by that texture.
I first made Guy's chili back in 2010. I remember it because we had a party of about 20 people over for my hubby's birthday. It was a big hit. His birthday is Jan 15, I just saw this in my Facebook memories yesterday. Funny.

Yah, think you nailed it on this one. I made Alton's chili back in the day and it morphed over the years into a chili that I truly love. The biggest thing I got from his recipe was to make your own chili powder, and I think using chipotles and tortillas to thicken was a touch of genius. However, I think holding himself to that "Texas Standard" was an issue for me. Sorry, Texas…but beans belong in chili. Without it, it's just spicy meat gravy.
AB’s use of tortillas chips reminds me of Jonathan Zaragoza using tortillas in the beans he makes. Thicker, I agree. Not a Food Network fan, watched some scores backing the day but YT chefs are where it’s at these days. Keep up the work AW. Love the content 🙌

I think I would love Guy's with the Brisket and Lamb instead of the chuck roast and the dark beer. Top it with the tortillas, sour cream, guacamole, cheese and green onions.
I'm surprised more things do not go into these recipes. Texas chili is a bit different and good. I'd put my chili up against these guys 😎🌶
I feel like you could take AB's chili, pair it with some refried beans and cheese, wrap it in a tortilla, and have an absolute bomb of a burrito.

Chili Colorado made using whole ancho, guajillo and pasilla chili peppers that you grind yourself is WAY better than these three meat soups.

To be truly honest I would agree with all of your rankings but if when you said "unconventional" about Alton's, I have to disagree because his chili is the most traditional and true to roots chili. Chili came from trail cooks and was simple, thick hearty made from whatever meats were available…rarely if ever fresh, they were usually stewed from jerky. Fresh produce was again rarely available on the trail so it was simple spices and yes true chili was modeled after the Mexican stews. Great content I like watching your stuff.

Guy's and Alton's chili was gross looking to me. (I HATE beans. And the juice? Gross squared) Onion, garlic, seasonings, meat, tomato sauce, diced tomatoes, tomato paste, peppers of choice. That's all ya need. If you are short on meat, beans are fine. Keep that mushy, pasty, mess somewhere safely hidden though.

There are several recipes that use masa as a thickener so using the chips work in a similar way.

Bro, whip some air into that sour cream. You're dropping solid lead chunks of sour cream, take a spoon and beat it like it owes you money it will come out almost like a meringue with a soft peak. Not to mention lighter but just as tasty.
