  1. This is definitely not anything close to green chile stew. This is sad. Go away, Texas. We New Mexicans can't stand you.

  2. White onion is fine. Around my area, Seattle, we have Walla Walla sweet onions, which are yellow, which have amazing flavor. Some areas may have a really great flavored white onion, or their white may be as good as their yellow, so using white would be fine. I suspect you have that case in the southwest, which is how he 'always use white onion in Mexican food' rule came to be. I think you need to consider the regional aspect of onions and their flavors. I know that Georgia has the Vidalia onions, also yellow, and they are amazing. I would be hard pressed not to use a Walla Walla or a Vidalia over a white if they were available.

  3. I just came by to let you know how jealous I am you’ve got some of that stuff in front of you right now. I lived in New Mexico for a really long time and sometimes outside of New Mexico. It’s a little more than just a pain in the butt trying to locate some good green chili.

  7. That looks really good. The only thing that I would change/add is some chunks of potatoes. Growing up in Albuquerque that was one of my favorite meals.

  8. I'm from Colorado, but boy I sometimes visit and stay in Missouri during the winter.. and I will tell you .. DO NOT come to Missouri expecting any type of good Mexican food, and don't expect that gorgeous aroma of roasting chili's on every corner in the fall like home.. you got two choices in Missouri, old el paso and taco bell that's all the brands the stores carry, they don't even carry anything Goya here. I have to order from amazon in advance if I make anything… And they usually have only a small basket of maybe a doz. chili's, poblanos', or jalapenos, usually dried up and wrinkly looking..lol..
    best green chili stew I ever had was an itty bitty tiny little shop run by a little old Spanish/Navajo lady in Santa Fe, sadly it's gone now and so is she, RIP.. but she had the best I ever tasted. she had potatoes and hominy in hers. and it was so good.

  9. My Grandmother tought me to cube the pork, season with salt pepper, onion and Garlic powder and a lot of Cumin, then brown in the cast iron, I also add the Shoulder Bone to the pot and pull it when it’s done.

  11. I grew up in Albuquerque NM. I even brought Kent a 40 lb. sack of roasted Hatch Green Chili and met him in a Walmart Parking lot in Al;tus OK. He signed his cookbooks for me. Wish I could have met Shannon also and had her sign the cookbooks. He's a great guy. I grew up eating green chili stew at The Frontier Restaurant in Albuquerque, and homemade. The only chili that I use is Hatch green chili., and even though I have lived in Oklahoma for fifteen years, I go back to Albuquerque every year and get two 40-lb sacks of fresh roasted Hatch green Chile. I am going to try the roasted tomatillos and see what it tastes like. The only other thing that I would add is diced potatoes. I have never had green chili stew that didn't have potatoes in it. I like to brown the potatoes in bacon grease, and add them last, until they are just tender.

  12. Just made this and it was incredible. Charred the peppers under the broiler and I used the Carnitas recipe from Danny Trejo's cookbook for the pork, which is my go-to pork shoulder recipe,w and it worked soooo well and was easy to do all in my kitchen.

  13. I grew up in the El Paso/Cruces/Rui area, my grandmothers always used white, I married a yankee, she buys yellow, I use whatever is in the pantry unless I shop specifically for what I’m making.
    As for your Chile Verde, make what you want, I don’t use the bacon but lard isn’t far off.

  15. Green Chili is from Colorado, Not New Mexico, and darn sure Not Texas! Mexicans throw red into everything they cook. Hatch, has been in New Mexico, and friends of my family from the San Luis Valley, Colorado, for generations. This recipe, is a ok, but trail camp soup. No Beans, in my Chili.

  17. Just curious if the "cooked pork" is basically roast pork you would use for pulled or BBQ pork? That's what I assumed.

  18. Golly, Kent, I didn’t know there was a “GreatOnion Debate.” It’s like something else I learned just recently, it usually doesn’t matter if I separate my dark clothes from my light clothes at the laundromat!

    I have a Yucatecan cook book written by a lady whose family runs cafeterias in the city of Merida, Yucatán, Mexico. One recipe calls for a white onion, and another recipe calls for a red onion. 🧅. I always thought the red onions should be used raw in salads or on sandwiches. 🥪.

    It turns out you can use whatever onions float your boat! This knowledge is liberating, ha-ha.

  19. Chile verde is so good. My dad would make this so spicy I couldnt eat it. We never ate this as a stew but with beans and rice.

  20. I make a very similar dish but use ground pork and pork tenderloin cut into cubes instead of shredded. No matter what your recipe, you can't go wrong with tomatilos, onion, and peppers!
