Vegetarian chilli | easy vegetarian recipes



Hi there! I’m Bailey, and welcome to Harvest Table Nutrition. Here you’ll find easy & nutritious vegetarian recipes to make healthy eating easier.

FULL RECIPE:

Ingredients:
1 Tbsp oil
½ onion, diced
1-2 carrots, washed, peeled, and diced
1 can (540ml) bean medley
1 can (540ml) kidney beans
1 can (398ml) Heinz Original beans in tomato sauce
1 cup textured vegetable protein (TVP), dry
1 can (796ml) diced tomatoes
1 can (341ml) whole kernel corn (or use the same amount of frozen corn)
1 cup frozen peas
1-2 Tbsp cumin
1-2 Tbsp smoked paprika
½ -1 Tbsp cayenne pepper
Salt

Directions:
Add oil to a large pot over medium heat. Add diced onion and let cook for 1-2 minutes until translucent and fragrant.
Add carrots, bean medley, kidney beans*, Heinz beans, diced tomatoes, and corn. Stir to combine all ingredients. Add the textured vegetable protein, salt and spices. Stir well to combine, and bring to a gentle simmer.
Let simmer until carrots are cooked, and TVP is no longer crunchy.
Add your frozen peas. Continue to cook until they’re warmed through.
I like to serve with shredded cheese and biscuits.
