Super Easy Eggplant Rings (Brinjal / Vazhuthana Snack) 🍆✨

Take fresh eggplants and slice them into round shapes. Carefully make a hole in the center of each slice to form rings.

Add the eggplant rings to a bowl and season with
• 1 tsp chilli powder
• Salt to taste
• 1 tsp pepper
• A pinch of turmeric
• A drizzle of oil

Mix well. Add 1 cup of flour and a little water to make a thick batter.
(This is a vegetarian version, so no eggs. If you prefer, you can add 1 egg for extra crispiness.)

Set aside.

In another bowl, mix breadcrumbs with
• ½ tsp chilli powder
• Salt to taste
• 2 tsp black sesame seeds

Coat each eggplant ring with breadcrumbs and deep-fry until golden brown. Keep aside.

Chutney time 🌶️

Use the leftover eggplant pieces (from the center of the rings).
Heat 2 tbsp of oil and add:
• Eggplant pieces
• Dried red chilli
• ½ sliced onion
• Small piece of tamarind
• 2–3 garlic cloves

Sauté until soft and lightly browned. Let it cool, then blend with a little water into a smooth paste. Finish with a squeeze of lemon 🍋.

Serve the crispy eggplant rings with this chutney and enjoy 😋
