This is my all-purpose green seasoning base that lives in my Flavour Bank. I blend peppers, onions, herbs and aromatics into a paste, freeze it into cubes and use it to start stews, rice, sauces or marinades during the week. It’s a simple way to keep flavour ready before you even start cooking.
Ingredients
Green bell peppers
Red onion
White onion
Spring onions
Garlic
Parsley
Coriander
Ginger
Green chillies (optional)
You can blend everything with a little water or oil, then freeze in silicone trays. One to three cubes is usually enough to start a dish.
