Filling:
Oil
Chopped garlic-1tbsp
Chopped Green chilli-1
Onion-1/4cup
Red Bell pepper-1/4cup
Yellow Bell pepper-1/4cup
Capsicum-1/4cup
Grated carrot-1/4cup
Black olives (optional)
Cabbage-1/4cup
Kashmiri red chilli powder-1tsp
Chilli sauce-1tbsp
Black pepper-1tsp
Salt as per taste
Tomato ketchup-2tbsp
Tandoori mayonnaise-1tbsp
Chopped paneer cubes-1/2cup
For dough:
All purpose flour-1cup
Salt
Water
Step 1: Prepare the Filling
Heat some oil in a pan.
Add 1 tbsp chopped garlic + 1 chopped green chilli.
SautƩ for a few seconds.
Add:
¼ cup onion
¼ cup red bell pepper
¼ cup yellow bell pepper
¼ cup capsicum
¼ cup grated carrot
¼ cup cabbage
Black olives (optional)
Stir fry on high flame for 2ā3 minutes (keep veggies crunchy).
š¶ Step 2: Add Sauces & Spices
Add:
1 tsp Kashmiri red chilli powder
1 tsp black pepper
Salt as per taste
1 tbsp chilli sauce
2 tbsp tomato ketchup
1 tbsp tandoori mayonnaise
Mix everything well.
š§ Step 3: Add Paneer
Add ½ cup chopped paneer cubes.
Mix gently and cook for 1ā2 minutes only.
Switch off the flame.
Step 4: Prepare the Dough
In a bowl, mix flour and salt.
Gradually add water and knead into a soft dough.
Cover and rest for 15ā20 minutes.
Divide into small balls.
Roll into thin rotis.
Cook lightly on a hot tawa (half-cooked only). Keep aside.
Step 4: Assemble the Wrap
Apply Tandoori mayonnaise and chilli sauce
Place filling in the center of the roti.
Add cheese
Fold sides and roll tightly.
Toast on tawa or in griller with little oil/butter until golden and crispy.
