This Hot Sauce CHANGED MY LIFE…. here’s the recipe🤯



Ferment Files Ep.7: Barbados Style Hot Sauce 🌶️

Ingredients:
– 200g yellow capsicum
– 100g chilies
– 100g onion
– water
– Sea salt
– 2 tsp mustard powder
– 1 tsp turmeric
– 20ml rice wine vinegar
– 80ml brine (add more if needed)

Instructions:
1. Chop capsicum, chilies, and onion & add to a jar.
2. Fill with water until fully covered.
3. Weigh EVERYTHING inside (not the jar).
4. Calculate 2% salt — for me this was 20g.
5. Add salt to the water, mix, and pour it back in.
6. Weigh it down, seal, and ferment for 2–4 weeks.
7. Strain the jar (keep the brine).
8. Blend everything until smooth.
9. Add more brine to get your perfect consistency.

Save this so you don’t forget the 2% rule 😉
