

I made these last year and theyve been in the fridge. I've been busy with growing peppers and not as much sauce, but had some people reach out that wanted to buy some. I sterilized the bottles and checked the pH on all these and it was 3 max for all of them from memory. The headspace area is brownish. There is a lot of fruit in these but a ton of vinegar. Did these spoil? They smell alright but I'm not tryna poison myself or friends lol

Hard to judge with sauces. Sometimes it’s just discoloration.

Signs of Spoilage: If the sauce develops mold around the cap, has a foul or non-tangy odor, or the bottle is expanding or fizzing, it is time to discard it. Small, unexpected “floaty things” in the sauce are a clear indicator to toss it.
Shelf Life: Unopened bottles can last 1–3 years in a cool, dark place. Once opened, they can last for 6 months to a year, especially if refrigerated.
If you can somehow scoop off the top and smell/taste that it’s ok it should be fine. A ph of 3 is pretty high, usually more than a commercial sauce, so it’s probably not harmful growth.
