I live in a white ass town, but since Covid, has become more diverse as a lot of people moved up here from Los Angeles and Orange County. We have this little food truck that serves some delicious homemade cooking, that tastes like my family’s cooking (from Guanajuato). I’m addicted to their chilaquiles. I make my own all the time, but I started working a full time job and don’t have time to cook as often as I’d like. Such delicious comfort food.
