Part 2: Easy Chilli Chicken Fried Rice 🍚🔥

In this video, I’ll show you how to make simple and delicious fried rice at home!

Start by heating a wok or large pan and adding a few tablespoons of oil. Crack in 4 eggs, scramble them, and set aside (don’t overcook!).

In the same pan, add 2–3 tablespoons of oil, 1 tablespoon ginger-garlic paste, and 2 chopped green chillies. Sauté well. Add ½ cup mixed vegetables (any you like), salt to taste, and cook until tender.

Next, add 1 finely chopped onion (golden brown) and 1 chopped bell pepper. Toss everything together, then add the scrambled eggs back in.

Now add cooked, chilled (preferably overnight) rice. Sprinkle in black pepper and white pepper, 1 tablespoon vinegar, and mix well.

Pour 2 tablespoons soy sauce around the edges of the pan for extra flavour, then mix. Add 1 teaspoon soy sauce and a few teaspoons of chilli sauce or green chilli sauce.

If using a regular pan, let the rice sit for 10–15 seconds to lightly crisp (you’ll hear a crackling sound), then stir. Repeat for that perfect crispy yet soft texture.

Serve hot with chilli chicken or enjoy on its own 😋
