Chili Jam Veggie Sandwich! 🥪🌶️



made on @onemightymill stone milled mighty wheat bread!!!! savory, a little sweet, and juuuust the right hit of spicy!!! 🤌

ingredients:
• 2 slices stone milled Mighty Wheat bread
• 3 portobello mushrooms
• 4 tbsp chili jam
• 3 roasted red pepper strips
• 1 ½ cups arugula
• 4 tbsp balsamic vinegar, divided
• 1 tbsp olive oil
• 1 tsp lemon pepper
• butter
• salt & pepper

instructions:
1. preheat oven to 400°F and line a small baking tray. place portobello mushrooms on the tray, face down. drizzle with 2 tbsp balsamic vinegar and season with salt and pepper. roast 10–15 minutes, until tender.
2. while mushrooms cook, toss arugula with remaining balsamic vinegar, olive oil, and lemon pepper until evenly coated.
3. butter both slices of bread and toast in a pan over medium heat until golden and crisp.
4. spread chili jam evenly over each slice. layer on roasted portobellos, roasted red peppers, and a generous handful of dressed arugula.
5. slice, serve immediately, and enjoy!
