Sizzling Chili Garlic Rice Noodles with Spicy Juicy Chicken
Experience the perfect balance of heat and comfort. This bowl features tender rice noodles drenched in homemade chili garlic oil, served with protein-packed chicken and vibrant, crisp-tender veggies.
Ingredients
The Base & Toppings:
• 200g Rice noodles (boiled according to package instructions)
• 1-2 Eggs (hard or soft-boiled)
• The Veggie Medley: Green beans, capsicum (bell pepper), carrots, green peas, and broccoli.
The Spicy Juicy Chicken:
• 2 Whole chicken breast pieces (chopped into bite-sized cubes)
• Spices: Salt, turmeric, black pepper.
• The Crunch: Sliced shimla mirch (capsicum).
The Chili Garlic Oil:
• 4-5 cloves of garlic (finely minced)
• 2 tbsp Red chili flakes (adjust for heat)
• ¼ cup Neutral oil (like vegetable or canola)
• 1 tsp Soy sauce (optional, for depth)
Step-by-Step Instructions
1. Prep the Rice Noodles & Eggs
Boil your rice noodles until al dente. Drain and rinse under cold water immediately to prevent them from sticking or overcooking. Boil your eggs to your liking (6 minutes for jammy, 9 minutes for hard-boiled), peel, and set aside.
2. The “Entangled” Spicy Chicken
In a pan over low flame, add your chopped chicken breast pieces. Season with salt, turmeric, and black pepper. Add the sliced shimla mirch.

The Secret: Keep the flame low and sauté slowly. This allows the juices to release and mix with the spices, creating a thick, flavorful coating that “entangles” with the meat, keeping it juicy rather than dry. Set aside once fully cooked and golden.

3. Sauté the Veggies
In the same pan (keep those chicken juices!), flash-fry your beans, carrots, peas, and broccoli. You want them vibrant and slightly tender but still holding a crunch.
4. The Chili Garlic Pour
Place the minced garlic and chili flakes in a small heat-proof bowl. Heat the neutral oil until it’s shimmering (but not smoking). Pour the hot oil over the garlic and chili—it should sizzle beautifully. Stir in a dash of soy sauce if you’re feeling fancy.
5. Assemble the Bowl
Place a generous portion of rice noodles in a bowl. Pour the Chili Garlic Oil over the noodles and toss until they are glossy and red. Arrange the sautéed veggies, the spicy chicken, and the halved boiled egg on top.
