โจ Creamy, zingy yoghurt dressing๏ฟฝโจ Classic salt & pepper chicken flavour๏ฟฝโจ Easy, high-protein, and family-friendly
Serves 6
๐ Ingredients: * 320g chicken mini fillets (diced) * 500g penne pasta * 4 peppers, chopped * 1 onion, sliced * 6 garlic cloves (sliced) * 4 spring onions Seasoning: * 1 tsp Chinese five spice * 1 tsp salt * 1 tsp black pepper * 1 tsp smoked paprika * 1 tsp chilli flakes (optional) * 1 tbsp cornflour * 1 tsp dark soy sauce * 2 tbsp olive oil Dressing: * 4โ5 tbsp Greek yoghurt * 2 tbsp olive oil * Juice of ยฝโ1 lemon * Zest of ยฝ lemon * 1 garlic clove (grated) * 1โ2 tsp honey * Salt & pepper
๐ฅ Method: 1. Roast the veg:๏ฟฝChop the peppers and onion, then toss with half the seasoning and 1 tbsp oil. Roast at 180ยฐC for 20 minutes. 2. Prep the chicken:๏ฟฝIn the same bowl, add the diced chicken with the remaining seasoning, cornflour, soy sauce, garlic and spring onions. Mix well. 3. Cook the pasta:๏ฟฝBoil the penne in salted water until cooked, then drain and toss with a little olive oil. 4. Cook the chicken:๏ฟฝAdd the chicken to the tray with the veg and roast for 15โ20 minutes until cooked through and slightly crispy. 5. Make the dressing:๏ฟฝMix together the yoghurt, olive oil, lemon juice, zest, garlic, honey, salt and pepper until smooth. 6. Bring it all together:๏ฟฝToss the pasta, chicken and roasted veg with the dressing while the pasta is still slightly warm. 7. Finish:๏ฟฝTop with extra spring onions and a squeeze of lemon.
