
I make my birria from scratch. This time I used 5lbs of pork belly cold smoked with applewood for 6 hours. Along with 2 lbs of pork chops and 2 lbs of pork ribs also smoked for 6 hours. I smoke the peppers and roast the tomatoes, garlic and onions for 2 hours. I like my consume to stick to my tacos mote than drip. So i use a few more tomatoes.
