Shawarma Chicken with all the Fixings
This is my go-to meal when I don’t know what to make, and it slaps every. single. time.
There are so many different sides and toppings you can pair with this depending on your mood and time, but for this quick after-work version I’m keeping it casual with a tzatziki and cucumber salad. Check out my Substack for the full recipe, extra topping ideas and recipes, and detailed instructions.
Shawarma Chicken
Ingredients
* 8 boneless chicken thighs
* 2 cloves garlic, grated
* 1 tbsp garlic powder
* 1 tsp cumin
* ½ tsp turmeric
* ½ tsp paprika
* ½ tsp chili powder
* ½ tsp coriander
* ¼ tsp allspice
* ¼ tsp cinnamon
* Juice of ½ lemon
* 2 tbsp olive oil
* 2 tsp salt
Instructions
Mix everything together and marinate the chicken for at least 30 minutes (or up to 48 hours if you’re organized unlike me).
Grill over medium-high heat for 5–7 minutes per side until charred and cooked through. Rest, slice, and pile into warm pita with whatever toppings you’re feeling.
Mandatory additions: fresh herbs, pickles, and hot sauce.
