๐ Recipe 1: Classic Coconut Oil Lemon Rice
๐ Recipe 2: Peas & Cashew Lemon Rice
๐ 1๏ธโฃ First Type of Lemon Rice
Ingredients:
Coconut oil โ 1 tablespoon
Mustard seeds โ 1 teaspoon
Chana dal (Bengal gram) โ 1 teaspoon
Urad dal (Black gram) โ 1 teaspoon
Peanuts โ 2 tablespoons
Grated ginger โ 1 teaspoon
Curry leaves
Green chilli โ 2
Red chilli โ 2
Turmeric powder โ ยผ teaspoon
Salt โ as needed
Lemon juice โ 2 tablespoons
Coriander leaves
Cooked rice
Method:
Heat coconut oil and prepare the tempering. Add turmeric powder and salt, then switch off the flame. Add lemon juice, coriander leaves, and cooked rice. Mix well. Again stir for only 2โ3 minutes on low flame and switch off.
๐ 2๏ธโฃ Second Type of Lemon Rice
Ingredients:
Gingelly oil (Sesame oil) โ 1 tablespoon
Mustard seeds -1 tsp
Chana dal -1tsp
Urad dal -1tsp
Cashews -5-7
Cumin seeds -1/4 tsp
Red chilli as per taste
Asafoetida (Hing)
Curry leaves
Green peas- 15-20 pices..
Salt
Little water
Lemon juice -2 tbs
Coriander leaves
Cooked rice
Method:
Prepare the tempering, then add green peas and cook until soft. Switch off the flame. Add lemon juice, coriander leaves, and cooked rice. Mix everything well.
