Love your work fella but I’d advise to get thicker steaks so you can really build the crust. I find a 2” steak works really well, which will allow you to flip every 30-45 seconds over the course of about 6-7 minutes for a perfect medium – medium rare.
Try doing that with chillis, peppers, tomatos and roasted onions and don't remove the charr….blend them with salt pepper and you have an amazing Baja Salsa…it's a game changer

This is my favourite way to cook peppers. I often do it straight over the gas hob, but BBQ is even better.

A much finer salt is better for seasoning steaks, just a standard salt mill will do, much more even coating
