THE NOURISHED EATERY + HEALTHY SLOW COOKER VEGAN CHILI RECIPE

*Heathy vegan chili recipe*

1 cup quinoa
1 medium carrot
1 red capsicum
1 zucchini
1 onion
1-3 chilis
1 can red kidney beans
1 can black beans
1 can diced tomato
1 tbsp. garlic
1 tbsp. paprika
1 tbsp. oregano
1-2 tbsp. chilli
1 tbsp. cumin
5 cups vegetable stock

Chop up your vegetables (I like mine quiet little) then put all of your ingredients into a slow cooker. Cook for 4 hours on high.

Serve with avocado, coriander, kale & lime…Or rice or corn chips! Yum!
