So many of you requested a recipe of Butternut Squash Chili after we mentioned it in our van tour. And it is fall, the season of hot soups and getting cozy by the fire. Thanksgiving is just around the corner so we thought what better timing could there be! This is a great recipe for family dinner and it will make your table feel bright and festive. We have cooked it in the van multiple times, especially when traveling in temperatures below freezing.

Benefits of butternut squash are fantastic, it’s packed with vitamins, minerals, and fiber, it has high antioxidants and highly beneficial for heart and blood pressure. And we just love it because of its bright happy color!

We encourage you to shop at your local farmer’s market to get the freshest produce. You will really taste the difference!

When we are on the road, we usually use Instant Pot but you can also cook it on stovetop or even on camp fire – oh, that might give it a nice smokey flavor. Let us know how it turns out!

Our favorite way to eat it is with gluten free seed and root root crackers, but of course you can pair with a nice fresh slice of bread. What’s interesting about this chili is that it is even better on a second day, after it cools off in the fridge… it must be the flavors that set in!
