Ingredients
For The Oil
– Chili Oil
– Chorizo
– Extra Oil if Needed
For the noodles
– Chili Oil Confit Chorizo
– Noodles
– Salt
– Soy Sauce
– Cumin
– Scallions
Directions
– Preheat the oven to 225ºF
– In a small pan cover the chorizo in chili oil, topping it with extra oil to cover if needed
– Cover and seal with tinfoil and place in the oven for 3-4 hours, check after 3
– When done, strain out the oil from the solids and keep the oil
– Toss the chorizo and fried chilis in a bit of soy sauce or salt, along with some cumin
– Cook noodles as instructed
– Add the noodles and mix
– Top with scallions, a fried egg would be nice now that I think about it
