1 1/2 tbsp olive oil
2 whole carrots, chopped
2 sticks celery, chopped
1 whole jalapeño, chopped
1 tbsp ginger, or to taste
1 tbsp tomato puree
1 whole red bell pepper, chopped
1 whole green bell pepper, chopped
1/4 tsp black pepper, or to taste
1/4 tsp salt, or to taste
1 tsp oregano
1 tsp chipotle pepper
1/2 tsp paprika
1 tbsp hot sauce, of choice
3/4 cup water
3 cups tomatoes, chopped
1 can black beans
1 can kidney beans
Lemon Cilantro Rice:
3 cups water
1 1/2 cup white rice
1 tbsp lemon juice
1 cup cilantro, chopped
