This is a very easy crispy fish with chilli recipe for a traditional indonesian dish called ikan balado. It’s as easy as seasoning and then frying the fish until it is crispy, and preparing the spicy zesty chilli sauce (or sambal balado). Once the fish has been fried and sambal chilli ready, they are mixed together to complete this flavourful dish.
The spicy chilli sauce is also very versatile. You can cook it with many other proteins such as eggs, chicken, or beef and it is just as delicious.

The full recipe is below

350g fish fillet pieces
Ā½ lime juice
Ā¼ tsp salt
Ā¼ tsp sugar
Ā¼ tsp white pepper
ā
cup cornflour
Vegetable oil
Chilli mixture:
5 cloves garlic, halved
1 shallot, roughly cut
10 red chilli (~160g), roughly cut and 5 deseeded
2 tomato (~200g), roughly cut
2 tsp sugar
1 tsp salt
ā
tsp chicken stock powder
1 tsp white vinegar
Add juice of Ā½ lime, salt, sugar, and pepper to fish and mix.
Coat each piece with cornflour.
In a pan, add 1cm of vegetable oil.
Fry fish on medium heat turning occasionally until golden brown.
Remove fish and drain well.
Prepare sauce by adding garlic, shallot, chilli, and tomato to food processor and chop.
In a clean pan, heat some vegetable oil to medium heat.
Add chilli mixture and fry until liquid has mostly evaporated.
Add sugar, salt, chicken stock powder, and white vinegar and mix well.
Note: this recipe makes a large batch of sauce so set aside half the sauce (or double the fish ingredients).
Add fried fish pieces to the sauce and mix well.
Serve immediately.
