This amazing sauce is spicy and has that authentic New Mexican Red Chile flavor, as well as the creaminess and richness of a typical alfredo sauce. We had a lot of fun creating this recipe inspired by a request from a loyal subscriber. There really is no limit to what you can create when combining foods from different cultures! Red Chile Alfredo
Ingredients:
6 tablespoons unsalted butter
1 ½ cups heavy cream
1 medium to large clove of garlic, minced
¾ – 1-cup chile caribe (depending on how hot you want it)

2 cups freshly grated parmesan cheese
Directions:
Prepare fettuccine, or linguine pasta according to package directions. Heat butter in a medium saucepan on medium heat. Add garlic and cook for about a minute, you don’t want to burn the garlic! Now add the heavy cream and cook for 5 minutes, it will reduce slightly. Add the red chile caribe, stirring constantly until completely incorporated. Cook for an additional five minutes to allow the flavors to get to know each other. Turn heat to very low and gradually add the parmesan cheese until smooth and creamy. Take off the heat and add noodles to the sauce, serve immediately. Top with grilled shrimp, or chicken.
