Ingredients (serves 8)

• 2 tbsp oil
• 2 onions, diced
• 2 carrots, grated
• 4 cloves garlic, crushed
• 500g beef mince
• 3 cans whole peeled tomatoes
• 2 cans black beans, drained and rinsed
• 4 cups corn kernels
• 2 tbsp vinegar
• 2 tsp ground cumin
• 1 tbsp ground paprika
• 1 tsp ground chilli, optional

Method
1. Heat oil in a large pot

2. Add onion, carrot and garlic and cook over a low heat until soft

3. Increase the heat and add the mince, stir and break up the mince until it is all cooked and separated

4. Add remaining ingredients and cook over a low to medium heat until the sauce thickens.
