Marinade
1/4 cup fish sauce
2 tbsp soy sauce
6 cloves garlic, smashed
1/4 cup brown sugar
1 shallot, thinly sliced
Garnish

Wings are a popular item in our household. One way we prepare wings is with fish sauce! If youāre not a fan of fish sauce, donāt worry, they donāt end up tasting like fish in the end. Instead, they taste savoury with hints of sweetness and garlic.
1. Peel and smash 6 cloves of garlic. Then, thinly slice 1 shallot. In a large bag with a zip top, combine the garlic and shallot with 1/4 cup of fish sauce, 2 tablespoons of soy sauce and 1/4 cup of brown sugar. Mix until combined and then add the chicken wings.
2. When your wings are done marinating, place the wings in your air fryer basket evenly spaced apart in a single layer. If you have a small basket like this one, youāll have to air fry your wings in batches. Set the temperature to 170 degrees celcius or 340 degrees Fahrenheit for 16 to 18 minutes. Repeat until all your wings have been air fried.
3. Alright while the wings are frying, letās get the fried shallots ready! Mince 1 shallot and 3 gloves of garlic. In a bowl, combine the minced garlic and shallot together with 1/8 teaspoon of vegetable oil and a pinch of salt. Stir until well mixed.
4. Heat 1/2 cup of oil in a pan over medium heat. Once the oil starts looking shiny, add the garlic and shallots and fry until they start browning, about two minutes. Remove the garlic and shallots and let them cool for a couple of minutes. Then re-add the garlic and shallots to the wok for a second fry, continuing for another 3 minutes and remove. They will continue to brown as they cool. If you want a little extra kick, add in some extra chopped chilli peppers when youāre frying.
5. Serve by either sprinkling some of your fried garlic, shallot and chili peppers over your wings (if everyone can handle spicy) or serve the shallot mixture in a seperate serving bowl to allow your family and friends to customize to their preferences!
