Hi all 👋🏼 Welcome to Vlogmas 2021, Day 4 😍🎄🎅🏼❤️ I am showing you my FAVORITE crockpot recipe of all time, White Chicken Chili 🌶🐣😍🙌🏼 this is a budget & time friendly recipe for all to enjoy! It’s pretty simple to make and makes great for left overs 😋
White Chicken Chili Recipe:
1 can black beans drained and rinsed
1 can white kidney beans (Great northern beans) drained and rinsed
1 can cannellini beans drained and rinsed
1 can sweet corn drained
1 can Rotel tomatoes NOT drained
1 package Hidden Valley Ranch Seasoning mix DRY
1 tsp cumin
1 TBSP chipotle powder
1 tsp onion powder
1/4 tsp ground red pepper
1 TBSP minced garlic
1/2 tsp black pepper
1/2 tsp garlic powder
1 TBSP butter
1 medium onion chopped (diced)-white, yellow, or sweet
18 oz package cream cheese, cubed
1-3 cups chicken broth = based on personal preference regarding thickness
3 to 4 cups cubed or shredded chicken
Add to crockpot: beans, corn, rotel, ranch mix, and spices- mix well
In a skillet add butter & chopped (diced) onion & sauté over medium heat until onions are translucent and tender
Add onion to crockpot and mix well
Add chicken
Add cubed cream cheese and stir well
Cover and cook for 4 hours on high or 6 hours on low or until heated all the way through
Garnish with tortilla/corn chips, sour cream, cilantro, lime, and/or cheese and serve!
