CHICKPEA SALAD
INGREDIENTS

• 3 Tbsp extra virgin olive oil
• 3 Tbsp lemon juice from 1 large lemon
• 1/2 tsp sea salt or to taste
• 1/8 tsp black pepper
• 1 tsp oregano
• 1 tsp chili flakes
• 1 ½ tsp amchur powder
• 1/2 cups diced tomatoes
• 1/2 cups diced capsicums
• 1/2 cups diced carrots
• 1/2 cups diced beetroot
• 1/2 cups boiled corns
• 1/2English Cucumber halved and sliced
• 1 cup boiled chickpeas
• 1/2 medium red onion thinly sliced
• 1/4 cup cilantro chopped
• 1 finely chopped green chili
• 1/4 cup mint leaves chopped
• ½ cup cottage cheese dice

PROCESS
1. In a salad bowl, combine the remaining chickpea salad ingredients.
2. In a small dish, whisk together the dressing ingredients.
3. 3 tablespoons olive oil, 2 tablespoons lemon juice, 1/2 teaspoon salt, 1/8 teaspoon pepper, 1 tablespoon oregano, 1 tablespoon chili flakes, 12 tablespoons amchur powder
4. To mix ingredients, whisk them together (or shake them together in a small mason jar).
5. In a salad dish, combine the remaining chickpea salad ingredients, season with salt and pepper to taste (we used all of it), and toss to coat.
