Here are some details for this recipe.. It had some spice heat and I made a fairly large pot of this chili, I recommend you do the same. It will go!
Ingredients:
– 1×28 ounce can of diced tomatoes (drain most of the liquid.
– 1×28 ounce can of stewed tomatoes (drain most of the liquid).
– 2 heaping tablespoons of minced garlic.
– I used 3 Jalapeño peppers, you can adjust for heat.
– I used 4 Serrano peppers, you can adjust for heat.
– V8 Juice (add for desired thickness).
– 2 packs of French’s Chili’O Seasoning (with onion).
– 2 Large sliced or chopped onions.
– Sliced Mushrooms (as much or as little as you want.
– I used 2x green peppers and 1x red pepper.
– 1 Can of kidney beans.
– 1 Can of pinto beans.
– 1 Can of black beans.
– 1 teaspoon of black pepper
– 1 teaspoon of chili powder (I used Legend Brand)
– 1 teaspoon of red pepper flakes (I used Legend Brand)
– Small amount of olive oil to coat the pot at first to sauté veggies.
Directions:
Coat bottom of pot with olive oil. Add the garlic and veggies. Sauté them until they begin to soften and produce liquid. Add 1 pack of French’s seasoning to veggies and mix well. Allow veggies to continue to sauté and absorb the slice. Stir every minute. Once they soften and begin to turn color, add the diced and stewed tomatoes and stir. Add the other French’s seasoning and stir. Add the chili powder, black pepper (to taste) and red pepper flakes and stir. Add the beans (drained but not rinsed) and stir. Add V8 juice to desired thickness. Allow to simmer on low heat, the longer the better, stirring occasionally.
Eat and enjoy!!! You can top it with anything you like.
