This time of year we eat and cook green chili, even freezing it for the months ahead. Hatch green chili is from new Mexico but green chili is a Colorado favorite! Grown in the Southwest region in America, there are a couple strands of this type of chili, grown green, then roasted in a large roaster, the smell is unmistakable.
