Hello all!
I was gifted this beautiful cast iron bean pot from my Dad. I have been wanting one for awhile so I had to make something with it ASAP!
If you want to make this chili recipe, you’ll need:
-2 cups dry pinto beans
-7 cups water
-1 TBSP salt
-1 TBSP butter or oil
Bring to a boil, then simmer for 5 hours or until beans are fully cooked.
Add these spices halfway through cook time:
-garlic powder
-minced dried onions
-cumin
-chili powder
-crushed red pepper
-marjoram
Brown 1 pound ground beef in skillet, add 2 stalks of chopped celery, dried onions & black pepper
To the pot add:
-1 can tomato sauce or crushed tomatoes
-1/2 cup dry elbow macaroni
-1 heaping teaspoon of parsley flakes
Add ground beef mixture to pot, then sliced carrots (about 5 baby carrots), let cook another ten minutes (boiling).
Add more water (if needed) as it cooks.
When ready to eat, top with shredded cheese, sour cream or guacamole! 🙂
