VEGETARIAN CHILI WITH BLACK BEANS INGREDIENTS:
2 tbsp extra-virgin olive oil
1 onion, chopped
1 cup carrots, chopped
3 cloves garlic, minced
2 celery ribs, chopped
1 jalapeno, seeded and chopped
1 red bell pepper, seeded and chopped
2 zucchini, halved and sliced
2 tbsp chili powder
1 tbsp dried oregano
1 tbsp ground cumin
¼ tsp cayenne pepper
1½ tsp salt
½ tsp black pepper
1 cup vegetable stock
1 28 oz can whole tomatoes, with their juices
1 cup corn
1 15 oz can black beans, drained and rinsed
¼ cup cilantro, chopped
½ cup Monterrey Jack cheese, shredded, for garnish
4 scallions, chopped, for garnish
