Heartland Maggie's Diner "Vegetarian Chili" Recipe!

Here’s my version of the vegetarian chili they serve at Maggie’s Diner on Heartland..It’s super good and delicious, low fat too! Hope you enjoy! keep Heartland Strong!

Maggie’s Vegetarian Chili

Ingredient List

½ cup chopped onions
4 cloves garlic
1 cup chopped bell pepper
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon of basil
1 teaspoon of oregano
1 cup fresh mushrooms chopped
1 can kidney beans
1 can or frozen bag of corn
3 cans or 3 cups of V8
1 cup of vege grounds (like morningstar)

Heat oil and saute the oil and garlic and then the vegetables. Then add the vege grounds and beans, saute the spices too. Add the rest of the ingredients and simmer for 20 minutes stirring occasionally.

Secret Ingredients: V8 juice and mushrooms!
