Sharing with you the recipe to a Chili dip sauce that I grew up with, called Nam prik klua น้ำพริกเกลือ, also known as Nam Jim Seafood น้ำจิ้มซีฟู๊ด
INGREDIENTS:
Makes a small bowl with Chili dip
20-30 Chilies Bird Eyes Chilies พริกขี้หนู
6-7 cloves Garlic กระเทียม
7-8 Small Thai Shallots หอมเแดง
1-2 tsp Palm sugar น้ำตาลปี๊บ
1tsp Salt เกลือ
2-3 Limes มะนาว
3-4 tbsp Fish sauce น้ำปลา
The way I grew up making it, was without coriander,
but if you like the taste, you may add a few coriander stalks along with the other ingredients.
*A tip is to cut the ingredients first for an easier pounding
If you don´t have a Mortar and Pestle, you can use a blender
to combine the ingredients.
This dip goes well with other meats as well, such as grilled chicken or fish.
It lasts for 3-5 days when kept in the refrigerator
