Cajun Potatoes:
Ingredients-
Baby potatoes- 200 gms
Maida- 1 cup
Salt – 1 tsp
Black pepper- ½ tsp
Oregano- 1 tsp
Water- as required
Oil to shallow fry/deep fry
Mayonnaise- ½ cup
Salt – 1.5 tsp
Red chili Powder- 1 tsp
Chili flakes- ½ tsp
Tomato ketchup- ¼ cup
Milk- 1/2 cup
Chopped onions- ¼ cup
Chopped coriander leaves-¼ cup
Process:
– Clean & wash all the potatoes. Do not peel them.
– Take some water in a pot. Put all the potatoes into it. Boil potatoes for 7-8 mins or until they’re cooked 90%.
– Strain them & keep them aside to cool. Once cooled, press and flatten slightly. Keep aside.
– Now, take maida in a bowl, add salt, black pepper & oregano. Adding little water at a time. Make a lump free & thin consistency slurry.
– Take flattened potatoes. Dip them into slurry, coat evenly.
Shallow fry the potatoes on medium flame from both sides until nice & crisp. Take out & keep aside.
– Now, for Cajun sauce, Take mayonnaise, salt, chili powder, chili flakes, tomato ketchup & milk. Mix & make a smooth sauce.
-To serve, Place Fried potatoes on a plate. Pour generous amounts of Cajun sauce over it. Sprinkle some red chili powder, chopped onions & coriander over it.
Cajun potatoes are ready ! Enjoy.
