Summer Rolls with Sweet Chilli Dipping Sauce | Catherine's Summer Recipes

For the dipping sauce
1 red chilli, finely chopped
2cm ginger, grated
3 tbsp caster sugar
2 garlic cloves, finely chopped
4 tbsp water
2 tbsp cider vinegar

12 rice wrappers

2 gem lettuce, shredded
10 cherry tomatoes, sliced
10 olives, sliced
2 carrots, grated
4 tbsp micro sprouts
80g goats’ cheese

To make the dipping sauce, place all the ingredients into a saucepan and simmer on a low heat for about 4 to 5 minutes, stirring all the time. Leave to cool.
To prepare the rolls, have all the ingredients ready.
Dip the rice wrapper, one at a time, into a shallow bowl of cold water.
Place on a flat surface and arrange small amounts of lettuce, cherry tomato slices, olive slices, grated carrot, micro sprouts and goats’ cheese in the middle of the wrapper.
Fold over the 2 sides and roll up. Place on the serving plate so that the folds are underneath. Repeat for the rest of the wrappers.
Serve immediately with cold dipping sauce.
